Peruvian gastronomy became an international phenomenon under the innovative impulse of great Chefs, such as Gaston Aucurio, Rafael Osterling and Pedro Miguel Schiaffano. It was even coined a “Gastronomy Revolution” sweeping the culinary world, particularly in the USA, where celebrity chef Gaston Acurio opened his “La Mar Cevicheria Peruana” on the San Francisco Waterfront and the first Peruvian culinary school opened its doors in Miami.
With over forty gourmet restaurants re-inventing traditional dishes and ‘fusion-ing’ the culinary riches of the Pacific coast, the Andean “cordillera” and the Amazon region with farther influences such as Spanish, French, Japanese, African and Chinese cuisines, Lima has defined itself as the new gastronomy capital in South America.
This journey is dedicated to all the foodies and gastronomy connoisseurs who want to experience the “Gastronomy Revolution” of Peruvian cuisine and satisfy their culinary appetite with amazing tastes. From Fusion (Asian to Mediterranean influences) to “NovoAndino”, from traditional to classic Andean, from local markets to professional kitchens, this culinary route will reveal the multitude of Peruvian flavors and the faces behind this succulent cooking.
This journey begins and ends in Lima, the bustling coastal capital and economic force of Peru, where you will glimpse the reminiscences of a time when it was the most important city of South America, the City of Kings. In Lima, you will not only dine at the finest gourmet restaurants in town, but you will also participate in a cooking class at the renowned “Malabar” restaurant of Chef Schiaffano. Along, your discovery of the colonial center of Lima, you will stop for coffee breaks and Pisco degustation at different historical bars.
From Lima, you will fly to Cuzco, where you will immerse yourself in the “Quechua” heart of the Andes Mountains. In addition to your historical exploration of Cuzco and the Sacred Valley, you will follow a culinary discovery by trying some of the best restaurants around, but also by participating in a cooking class with the chef of a luxury hotel restaurant and in the preparation of traditional fares with local women. Your experience will be enhanced by encounters with breeders and farmers from the region, as well as visits to a communal weaving workshop and local markets.
From Cuzco you will return to Lima for a last impression of the capital, including a visit to the “International Potato Center” and to the Palominos Islands. In Lima, you will also enjoy two last gourmet dinners at the “Astrid & Gaston”, the restaurant of internationally acclaimed celebrity Chef Gaston Acurio, and at “Central Restaurante” the newest gourmet address in town.

This program considers an international arrival in the middle of the afternoon, and an international departure in the morning, which we strongly suggest.
